On Wednesday, August 13, Giselle Miami will host the next installment of its acclaimed Guest Chef Series with a one-night-only collaboration featuring Chef Cesar Zapata. Known for his Michelin-recognized restaurant Phuc Yea, Chef Zapata is one of Miami’s most dynamic culinary forces, celebrated for his bold and inventive fusion of Colombian and Vietnamese flavors. A trailblazer since launching Miami’s first pop-up restaurant in 2011, Cesar’s creativity and hustle have earned him national recognition with appearances on Diners, Drive-Ins and Dives, Tastemade, Vice TV, and Chopped on Food Network. His restaurant portfolio also includes Pho Sho and LcKy ChKn at Hard Rock Stadium, and he has earned four consecutive Michelin Bib Gourmand wins for Phuc Yea (2022–2025).

For this special evening, Chef Zapata will join forces with Giselle’s Executive Chef Gustavo Zuluaga to create a globally inspired, boundary-pushing menu served in Giselle’s glamorous rooftop setting above E11EVEN Miami. Guests can expect inventive dishes such as Chilled Ceviche, Short Rib Spring Rolls, and an indulgent Oak-Smoked Beef Rib Platter, along with additional surprise creations that showcase the distinct styles and flavors of both chefs.
